Ingredients

Cake:

  • ½ cup 1 stick butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ tsp cinnamon
  • ¾ cup milk
  • 1 large green apple peeled and chopped

Crumb Topping:

  • ½ cup butter softened
  • ¾ cup brown sugar packed
  • 1 cup all purpose flour
  • 1 teaspoon cinnamon

Glaze:

  • ¼ cup powdered sugar
  • ½ tsp vanilla
  • 1 tsp milk

Instructions

  • Preheat your oven to 350 degrees. Line a 8x8 inch baking pan with parchment paper and lightly coat with nonstick spray; set aside.
  • Peel and chop the apple.
  • Beat together the butter, granulated sugar, brown sugar, egg, and vanilla in a large bowl or bowl of a stand mixer until smooth and creamy. Mix in the flour, salt, and baking powder until combined.
  • Add the milk and beat until a smooth batter forms.
  • Spread half the batter evenly in the prepared pan, then layer the chopped apples on top.
  • For the crumb topping, combine butter, brown sugar, flour, and cinnamon in a medium bowl. Cut the butter into the mixture until it forms crumbs. Sprinkle half of the crumbs over the apples.
  • Spread the remaining batter evenly over the apples and crumbs, then top with the rest of the crumb mixture.
  • Bake for 45 minutes, or until a toothpick inserted in the center comes out clean. Let cool, then prepare the glaze and drizzle over the cake before serving.

Storage

Store leftover apple crumb cake in an airtight container at room temperature for up to 2 days, or refrigerate it for up to 4 days. To reheat, warm individual slices in the microwave for about 10 to 15 seconds, just until the cake is soft and the crumb topping tastes buttery again.
